Copra

Copra is the dried meat or kernel of mature coconuts, primarily used for coconut oil extraction and also consumed as dry fruit in its edible form.

Description

Copra is the dried coconut kernel or endosperm processed from fully matured (12-month-old) freshly harvested coconuts. Copra contains the highest percentage of oil compared to other oil seeds. It contains 15–20% carbohydrates, 9% protein and 4.10% crude fibre, besides 65–68% fat.

The copra made in India may be classified into two groups:

  • Edible Copra: Superior grade, consumed as dry fruit and used in religious offerings. Made in the form of balls or cups.

  • Milling Copra: Used for extraction of coconut oil, usually in cup form only.

The drying process may be done using traditional sun-drying or mechanical dryers (kiln, flatbed, or channel dryers). Sun drying should begin within 4 hours of splitting and be completed quickly to avoid fungal contamination.

Hot air dryers are recommended for high-quality copra as they prevent direct exposure to fire and produce copra that is clean, white, and free from mold or dirt. Uniform drying to 6% moisture content is necessary to ensure quality.
